why do we need this? There is scheduled CI in this repository defined here https://github.com/chipsalliance/Cores-VeeR-EL2/blob/main/.github/workflows/ci.yml#L9

hello @kgugala , this is the first step of a broader change, related to issue #477: Current CI flow is too long In summary, we want to have 2 main workflows: a nightly regression + coverage calculation (this one), and a light PR smoke test (it will be the "ci.yml" after removing most of the tests) Feel free to add your comments on issue #477 , so we can align a good solution. |

Create a nightly regression workflow, that has all tests + documentation build + coverage calculation.
Currently it is very similar to "ci.yml", but it will be updated with more tests in future requests.
